These Zucchini Corn Fritters are a vibrant, nutrient-packed weeknight option that balances fiber from corn, hydrating zucchini, and protein from eggs and cheese. Ingredients

  • 2 cups organic corn kernels
  • 1 cup organic cheddar cheese (or dairy-free option)
  • 1 cup shredded zucchini, squeezed of moisture
  • 1 pasture-raised egg, beaten
  • 1 cup gluten-free all-purpose flour (or flour of choice)
  • 1/4 cup milk (organic whole or unsweetened dairy-free)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • Pepper, to taste
  • 1/2 tsp smoked paprika
  • 1/4 cup chopped scallions + more for garnish
  • Avocado oil for pan-frying
  • Primal Kitchen Garlic Aioli (optional chipotle powder to make it chipotle aioli)

Directions

  1. Shred zucchini and squeeze out excess water.
  2. In a large bowl, mix zucchini, corn, cheese, egg, flour, milk, onion powder, garlic powder, salt, pepper, smoked paprika, and scallions until combined.
  3. Heat oil in a skillet over medium heat. Spoon 2 tablespoons of batter per fritter and flatten gently.
  4. Cook 2–3 minutes per side until golden brown. Transfer to a paper towel-lined plate.
  5. Serve warm with garlic aioli and garnish with extra scallions.
