Tomato Basil Chickpea Salad

There’s something special about a salad that feels both hearty and refreshing, and this Tomato Basil Chickpea Salad is exactly that. I originally made it for a 4th of July gathering, and it was such a hit that I knew it had to live on my site. It’s vibrant, herby, and full of Mediterranean-inspired flavor—thanks to fresh basil, sun-dried tomatoes, and a homemade basil-garlic dressing that ties it all together beautifully.

This salad is not only delicious but nutrient-dense. Chickpeas are a great source of plant-based protein and fiber, helping support steady energy and digestion. Zucchini and cucumbers provide hydrating crunch and vitamins, while pine nuts add healthy fats and a lightly toasted, nutty finish. Plus, the dressing is rich in heart-healthy olive oil and antioxidants from fresh basil and garlic. 🌿🍅 Tomato Basil Chickpea Salad 🍅🌿

Serves 7–8

Ingredients:

  • 3 cans or jars of (15 oz) chickpeas, rinsed and drained (I really like Jovial's pre-soaked and pressure cooked chickpeas)
  • 3 large zucchini, chopped
  • 1 jar chopped sun-dried tomatoes (I recommend Brad's Organic marinated in olive oil)
  • 1 pack mini cucumbers, chopped
  • 1/2 cup lightly toasted pine nuts (pignoli)
  • 1.5 cups fresh basil, chopped
  • 1 cup arugula
  • Salt & pepper to taste

Dressing:

  • 1/3 cup extra virgin olive oil
  • 1–2 cups fresh basil
  • 3–4 garlic cloves (can roast for less of a bite)
  • Splash of red wine vinegar
  • 1 tbsp raw honey (optional)
  • Salt & pepper to taste

Instructions:

  1. Sauté zucchini and about half of the chopped sun-dried tomatoes in a pan with salt, pepper, and a drizzle of oil from the sun-dried tomato jar. Let cool.
  2. In a large bowl, combine chickpeas, chopped cucumber, the cooled zucchini mix, and remaining sun-dried tomatoes. Season with salt and pepper.
  3. Add toasted pine nuts, fresh basil, and arugula.
  4. Blend all dressing ingredients until smooth. Pour over the salad and toss to coat well.
  5. Top with extra pine nuts if desired. Enjoy fresh!
