Mediterranean Spiral Salad
Servings: 1–2 | Prep Time: 15 minutes
Ingredients:
- 1/4 cup chickpeas, roasted with paprika and salt
- 1 tbsp toasted pignoli (pine nuts)
- 1 large zucchini, spiralized
- 2–3 long carrots, spiralized
- Thinly sliced red onion (just a little for flavor)
- 1/4 cup sliced Kalamata olives
- A handful of spicy microgreens
Instructions:
- Preheat oven to 400°F. Toss chickpeas with avocado oil, paprika, and salt. Roast for 20–25 minutes until crispy.
- Toast pignoli in a dry skillet over low heat until lightly golden. Cool.
- Spiralize zucchini and carrots. Slice onion thinly.
- Combine all ingredients in a large bowl.
- Toss with lemon-olive oil vinaigrette or dressing of choice. Serve immediately.
