Spiralized Mediterranean Salad

Mediterranean Spiral Salad

Servings: 1–2  |  Prep Time: 15 minutes

Ingredients:

  • 1/4 cup chickpeas, roasted with paprika and salt
  • 1 tbsp toasted pignoli (pine nuts)
  • 1 large zucchini, spiralized
  • 2–3 long carrots, spiralized
  • Thinly sliced red onion (just a little for flavor)
  • 1/4 cup sliced Kalamata olives
  • A handful of spicy microgreens

Instructions:

  1. Preheat oven to 400°F. Toss chickpeas with avocado oil, paprika, and salt. Roast for 20–25 minutes until crispy.
  2. Toast pignoli in a dry skillet over low heat until lightly golden. Cool.
  3. Spiralize zucchini and carrots. Slice onion thinly.
  4. Combine all ingredients in a large bowl.
  5. Toss with lemon-olive oil vinaigrette or dressing of choice. Serve immediately.
