Ingredients

- 1/2 medium purple onion, thinly sliced

- 1/4 cup toasted cashews
Dressing
- 1/3 cup extra virgin olive oil
- 1 tbsp raw honey
- 1 tbsp Dijon mustard
- Juice of 1 lime (about 2 tbsp)
- Thumb of red chili (adjust to taste)
- Salt & pepper to taste
Instructions
- Preheat the oven to 350°F (200°C). Toss diced purple potatoes in a little olive oil, salt, and pepper. Roast for 35–40 minutes until fork tender and golden on the edges.
- While potatoes roast, combine shaved Brussels sprouts, purple cabbage, and purple onion in a large bowl.
- Add chopped apricots and toasted cashews.
- In a small jar, whisk or shake together all dressing ingredients until well combined.
- Once potatoes are done, let cool and add to the salad.
- Drizzle dressing over the salad and toss to combine. Serve immediately or chill and let flavors meld.
