Pitaya Coconut Swirl Ice Pops

Freeze Time: 6+ hours

Coconut Base
  • 1 can full-fat coconut milk
  • 1 tbsp pure maple syrup
  • 1/4 tsp vanilla powder or extract
  • Pinch of sea salt (optional)
Pitaya Swirl
  • 2 packets unsweetened frozen pitaya (dragon fruit)
  • Juice of 1/2 lime
  • Optional: 1 tsp maple syrup to taste
Instructions
  1. Blend coconut base ingredients until smooth. Set aside.
  2. Blend pitaya with lime juice (and optional maple syrup).
  3. Layer coconut and pitaya in molds, swirl gently with a skewer.
  4. Insert sticks and freeze at least 6 hours or overnight.
  5. Run molds under warm water to release. Enjoy!
