Pitaya Coconut Swirl Ice Pops

Coconut Base
- 1 can full-fat coconut milk
- 1 tbsp pure maple syrup
- 1/4 tsp vanilla powder or extract
- Pinch of sea salt (optional)
Pitaya Swirl
- 2 packets unsweetened frozen pitaya (dragon fruit)
- Juice of 1/2 lime
- Optional: 1 tsp maple syrup to taste
Instructions
- Blend coconut base ingredients until smooth. Set aside.
- Blend pitaya with lime juice (and optional maple syrup).
- Layer coconut and pitaya in molds, swirl gently with a skewer.
- Insert sticks and freeze at least 6 hours or overnight.
- Run molds under warm water to release. Enjoy!
