🍍 Piña Colada Chia Pudding

Serves 1 | Gluten-free, dairy-free, vegan

Ingredients:
  • 1.5 cups coconut milk (I used unsweetened)
  • ⅓ cup chopped pineapple (fresh or frozen)
  • 4 tbsp chia seeds
  • ½ tsp pure vanilla extract
  • Extra chopped pineapple, for layering
  • Shredded unsweetened coconut, for layering
Instructions:
  1. Blend coconut milk with ⅓ cup pineapple until smooth.
  2. Whisk in vanilla and chia seeds until well combined.
  3. Cover and chill for at least 3 hours or overnight to thicken.
  4. Layer in a glass jar: chopped pineapple, shredded coconut, chia pudding, and top with more pineapple and coconut.

Storage: Best enjoyed within 3 days.
