Creamy Mashed Cauliflower

Mashed cauliflower is a cozy, nutrient-dense alternative to traditional mashed potatoes—but this version doesn’t skimp on flavor. The addition of a few fingerling potatoes gives it just the right amount of creaminess while keeping the starch content lower. This recipe is both gut-friendly and hormone-supportive. It uses garlic-infused oil for those following a low FODMAP diet, but if you're not sensitive to garlic, you can sauté or roast fresh cloves before blending for a richer, more caramelized flavor. Creamy Mashed Cauliflower with Thyme & Dill

Ingredients

  • 2 heads cauliflower, chopped
  • 4–5 fingerling potatoes, peeled
  • 2 tsp garlic-infused olive oil (or 2 cloves fresh garlic)
  • 1 tbsp ghee or dairy-free butter
  • 2 sprigs fresh thyme
  • Dried (2 tsp) or fresh (1-2 tbsp) dill
  • Salt & pepper to taste
  • Optional: splash of non-dairy milk (e.g., almond milk)

Instructions

  1. Bring a large pot of salted water to a boil. Add chopped cauliflower and peeled fingerling potatoes.
  2. Boil until both vegetables are fork-tender, about 10–15 minutes. Drain and transfer to a blender or food processor.
  3. If using fresh garlic, sauté in a pan with a bit of oil until golden, or roast in the oven at 375°F for 10–15 minutes until soft and fragrant.
  4. Add garlic (or garlic-infused oil), thyme, and dried spices to the blender. Blend until smooth and creamy.
  5. Optional: Add a splash of non-dairy milk to help blend if needed.
  6. Transfer to a serving bowl and stir in ghee or butter while warm. Mix until fully incorporated.
  7. Serve as a side or use as a base for nourish bowls. Also delicious topped with crispy shallots or sautéed mushrooms.
