Ingredients:
- 2 lbs organic, grass-fed ground beef
- 4 whole pasture-raised eggs, beaten
- 2.5 tbsp gluten-free Italian breadcrumbs
- 1/3 cup fresh chopped parsley
- 1/3 cup fresh chopped dill
- 1/3 cup fresh chopped chives or scallions
- 1/4 cup fresh chopped basil
- 3 large garlic cloves, minced
- 1 tsp Dijon mustard (optional)
- 1/2 tsp cayenne pepper (optional)
- Pink salt & ground black pepper to taste
Directions:
- Preheat oven to 375°F.
- Add ground beef to a large mixing bowl.
- Beat the eggs and add them to the bowl with the beef. Use your hands to mix until evenly combined.
- Create a pocket in the center of the beef and add all herbs, breadcrumbs, garlic, and optional ingredients.
- Mix thoroughly with your hands until everything is well incorporated.
- Use an ice cream scooper or your hands to form evenly sized balls.
- Place meatballs on a baking sheet and bake for ~25-28 minutes, or until cooked through (about 160 internal temp).
