Ingredients:

  • 2 lbs organic, grass-fed ground beef
  • 4 whole pasture-raised eggs, beaten
  • 2.5 tbsp gluten-free Italian breadcrumbs
  • 1/3 cup fresh chopped parsley
  • 1/3 cup fresh chopped dill
  • 1/3 cup fresh chopped chives or scallions
  • 1/4 cup fresh chopped basil
  • 3 large garlic cloves, minced
  • 1 tsp Dijon mustard (optional)
  • 1/2 tsp cayenne pepper (optional)
  • Pink salt & ground black pepper to taste

Directions:

  1. Preheat oven to 375°F.
  2. Add ground beef to a large mixing bowl.
  3. Beat the eggs and add them to the bowl with the beef. Use your hands to mix until evenly combined.
  4. Create a pocket in the center of the beef and add all herbs, breadcrumbs, garlic, and optional ingredients.
  5. Mix thoroughly with your hands until everything is well incorporated.
  6. Use an ice cream scooper or your hands to form evenly sized balls.
  7. Place meatballs on a baking sheet and bake for ~25-28 minutes, or until cooked through (about 160 internal temp).
