Ingredients (Serves ~3)
- 1/2 red onion, thinly sliced
- 1 large cucumber, thinly sliced
- 1/2 small watermelon, cubed and lightly salted
- 1 Thai red chili, finely chopped
- 1 cup fresh basil, chopped
- 1 generous handful of mint, chopped
- 1/3 cup raw cashews, lightly toasted and cooled
Dressing
- 1–1.5 tbsp toasted sesame oil
- 1 tbsp coconut aminos
- Zest of 1 lime
- Juice of 1 lime
- 1 tbsp raw honey
- Salt & pepper to taste
Directions
- If desired, salt the cubed watermelon and let it drain in a strainer for 10–15 minutes to reduce excess liquid.
- In a large bowl, combine the onion, cucumber, watermelon, chili, basil, and mint.
- In a separate bowl, whisk together all dressing ingredients until well combined.
- Lightly toast the cashews in a dry pan, then let them cool before adding to the salad.
- Pour the dressing over the salad just before serving and toss gently to coat. Enjoy immediately!
