Herb-Crusted Cauliflower Steaks
Serves 4-6
- 2 heads of cauliflower (cut into 1.5-inch "steaks")
- 2-3 tbsp olive oil (for roasting)
- 4 oz olive oil (for garlic herb oil)
- Salt & pepper (to taste)
- 4 garlic cloves (crushed)
- 4 tbsp fresh parsley (chopped)
- 4 tbsp fresh basil (chopped)
- Crushed red pepper (for heat, optional)
- 1/4 cup gluten-free Italian seasoned breadcrumbs (optional)
Instructions:
- Slice cauliflower heads into 1.5-inch thick "steaks." Some florets may break off — that's fine!
- Arrange steaks in a glass baking dish, coat both sides with 2-3 tbsp olive oil, salt, and pepper. Roast at 350°F for 40 minutes, flipping halfway, until fork-tender but not falling apart.
- While cauliflower roasts, make the garlic herb oil. Mix 4 oz olive oil, 4 crushed garlic cloves, 4 tbsp chopped parsley, and 4 tbsp chopped basil. Muddle to release flavors, then let it marinate. Strain if you prefer a smooth oil or keep it rustic with the herbs in.
