Ingredients

  • 2 ripe peaches, halved and pitted
  • 2 cups spring mix
  • 2 cups arugula
  • 1 cup heirloom cherry tomatoes, halved
  • 1 cup thinly sliced red cabbage
  • 1 cup sliced cucumbers
  • 3 tbsp chopped fresh basil
  • 1 tsp lime zest

Dressing

  • 1/3 cup extra virgin olive oil
  • 1–2 tbsp balsamic vinegar (adjust to taste)
  • Salt & pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium heat. Lightly brush peach halves with olive oil and grill for 2–3 minutes on each side until lightly charred. Remove and slice.
  2. In a large bowl, combine spring mix, arugula, cherry tomatoes, red cabbage, cucumbers, basil, and lime zest.
  3. Add grilled peach slices on top.
  4. Whisk together olive oil, balsamic vinegar, salt, and pepper. Drizzle over salad and gently toss just before serving.
