Garlic & Herb Mashed Sweet Potatoes
Serves 4-6
Ingredients:
- 4 large Japanese sweet potatoes
- 1/2 cup dairy-free butter, cut into cubes (I use Miyokos)
- 4-8 garlic cloves, sautéed (8 for max flavor!)
- 1/3 cup chopped chives
- 1/4 cup chopped dill
- Salt & pepper to taste
- Olive oil (optional, for texture)
Instructions:
- Peel and chop the Japanese sweet potatoes into chunks. Boil them in salted water until soft (about 15-20 minutes).
- Drain the potatoes and mash them with a potato masher or fork.
- In a pan, sauté the garlic cloves in a little olive oil until fragrant.
- Add the sautéed garlic, dairy-free butter, chopped chives, and dill to the mashed sweet potatoes. Stir until combined and smooth.
- Season with salt and pepper to taste. Add olive oil for an extra creamy texture, if desired.
