Homemade Tortilla Chips:

  • 3–4 small gluten-free tortillas, cut into quarters
  • Avocado or olive oil, for brushing
  • Pinch of salt + 1/2 tsp dried cilantro

Instructions: Preheat oven to 300°F. Lightly brush tortilla pieces with oil, sprinkle with salt and dried cilantro, and bake until just crispy (about 8–10 mins). Watch closely to avoid overbrowning.

Veggie Stir-Fry:

  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 1/2 red or yellow onion, chopped
  • 1 small jalapeño, finely diced (optional)
  • 1/2 cup cherry tomatoes, halved

Instructions: Sauté veggies in a bit of oil until softened but still vibrant. Let cool slightly before assembling salad.

Salad Base & Toppings:

  • 3 cups spring mix
  • 1 cup cabbage slaw
  • 1 cup kidney beans or beans of choice, 1/2 cup per salad
  • 1/2 lb ground turkey, cooked with clean taco seasoning (4oz per salad)
  • 1/3 cup chopped cucumber
  • 1 avocado per salad, sliced (1/2 avocado per salad)
  • 2 tbsp chopped fresh cilantro
  • Lime wedges, for serving

Simple Dressing:

  • Juice of 1 lime
  • 1.5 tbsp olive oil
  • Pinch of sea salt

Assembly:

  1. In each bowl, layer spring mix and cabbage slaw.
  2. Add beans, taco turkey, and stir-fried veggies.
  3. Top with chopped cucumber, avocado slices, fresh cilantro, and tortilla wedges.
  4. Drizzle with dressing and serve with lime wedges.
