Cherry Chocolate Chip Ice Cream 🍒🍫

Dairy-free, dreamy, and packed with cherry-chocolate nostalgia

📝 Ingredients:

  • 20 oz dark sweet cherries
  • 1 can full-fat coconut milk
  • 1/2 can coconut cream
  • 1/4 cup golden maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp arrowroot powder or tapioca starch
  • 1/8 tsp salt
  • 2 tsp vanilla extract
  • 1/2 cup chocolate chips

👩‍🍳 Directions:

  1. In a saucepan, warm the cherries with the arrowroot or tapioca starch over medium heat, stirring frequently. Lightly mash as they soften and release juice.
  2. Add coconut milk and cream. Stir in the maple syrup, coconut sugar, vanilla, and salt. Simmer gently until fully combined.
  3. Remove from heat and blend until smooth—or leave a few cherry chunks for texture! Chill in the refrigerator overnight.
  4. Churn the mixture in an ice cream maker according to manufacturer’s instructions. As it thickens, slowly add in the chocolate chips.
  5. Transfer to a freezer-safe container and freeze for several hours until firm. Scoop and enjoy!

Note: You’ll need an ice cream maker for this recipe. Don’t forget to chill your machine’s insert for at least 24 hours in advance so it’s ready to go!
