Spiced Granola

Ingredients:

  • 1 ½ cups organic oats
  • ⅓ cup unsweetened shredded coconut
  • ⅓ cup hemp hearts
  • ⅓ cup chopped pecans
  • ⅓ cup chopped walnuts
  • ½ cup sunflower seeds
  • ½ cup tahini
  • 3 heaping tsp pumpkin pie spice
  • Generous pinch of salt (adjust to taste)
  • Coconut oil (melted, about 2 tbsp)
  • Maple syrup (2-3 tbsp, adjust to sweetness)

Instructions:

  1. Preheat oven to 300°F (150°C).
  2. In a large bowl, combine oats, coconut, hemp hearts, pecans, walnuts, sunflower seeds, and pumpkin pie spice.
  3. Add tahini, salt, melted coconut oil, and maple syrup. Mix well until evenly coated.
  4. Spread mixture evenly on a parchment-lined baking sheet.
  5. Bake for 25–35 minutes, stirring once halfway through, until golden and fragrant.
  6. Let cool completely before storing in an airtight jar.

Optional Add-Ins:

  • Cacao nibs (after baking)
  • Goji berries or dried fruit
