Chai Spiced Snowball Bites

Makes: 10–12 bites   |   Prep Time: 15 min   |   No Bake

Ingredients:

  • 10 small medjool dates (or 7 regular ones), pits removed
  • 3 tbsp flaxseeds
  • 2 tbsp pumpkin seeds
  • 1 tbsp chai spice blend (see below)
  • Unsweetened shredded coconut (for rolling)

Chai Spice Blend (makes extra!):

  • 3 tbsp Ceylon cinnamon
  • 1 tbsp ground ginger
  • ½ tbsp cardamom
  • ½ tbsp nutmeg
  • ½ tbsp cloves

Instructions:

  1. Soak dates in hot water for a few minutes to soften, then drain.
  2. Add dates, flaxseeds, pumpkin seeds, and chai spice to a food processor. Blend until sticky and uniform.
  3. Roll into small balls using a spoon or cookie scoop.
  4. Coat each bite in shredded coconut for the “snowball” look.
  5. Chill in the fridge or freezer until firm.
