Cabbage Steaks with Tahini Ginger Dressing
Ingredients
- 1 head of green or purple cabbage
- Avocado or olive oil, for brushing
- 1/3 cup tahini
- 2 tsp fresh ginger, minced (plus more for topping)
- 2 tbsp tamari (or coconut aminos)
- 2 tsp rice vinegar
- 1 tbsp pure maple syrup
- Crushed red pepper flakes, to taste
- Optional: 1–2 tsp water to thin dressing, if needed
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice cabbage into 1.5-inch thick discs, cutting from top to stem to create “steaks.”
- Lay cabbage steaks flat on the baking sheet and brush both sides with oil.
- In a bowl, whisk together tahini, chopped ginger, tamari, rice vinegar, maple syrup, and red pepper flakes. Add 1 tsp of water if needed to reach a brushable consistency.
- Brush the top side of each cabbage steak generously with the tahini dressing.
- Sprinkle additional minced ginger and red pepper flakes over the top.
- Roast for 40–50 minutes, or until tender with crispy edges.
- Serve warm, optionally topped with fresh herbs or extra drizzle of dressing.
