Apple & Sage Breakfast Chicken Meatballs

Servings: 12 medium sized meatballs

Cook Time: 25–28 minutes

Ingredients
  • 1 lb organic, pasture-raised ground chicken
  • 1 medium apple, shredded (about 3/4 cup, excess juice squeezed out)
  • 1 egg (can sub with 1 flax egg if needed: mix 1 tbsp ground flax + 3 tbsp water, rested for 5–10 min)
  • 3 tbsp almond flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 tsp dried sage
  • 1 tsp dried thyme (pinch to wake it up)
  • 1 tsp sea salt
  • 1/4 tsp black pepper
Instructions
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a small bowl, beat the egg or prepare the flax egg and let it rest 5–10 minutes.
  3. In a large bowl, combine ground chicken, shredded apple, almond flour, egg, and all seasonings. Mix gently until just combined.
  4. Form into meatballs and place on baking sheet.
  5. Bake for 25–28 minutes, or until internal temperature reaches 165°F. For extra browning, broil the last 2–3 minutes.
  6. Serve warm and enjoy as a protein-rich, blood sugar–friendly breakfast.
