Ingredients
- 1 lb organic, pasture-raised ground chicken
- 1 medium apple, shredded (about 3/4 cup, excess juice squeezed out)
- 1 egg (can sub with 1 flax egg if needed: mix 1 tbsp ground flax + 3 tbsp water, rested for 5–10 min)
- 3 tbsp almond flour
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1 tsp dried sage
- 1 tsp dried thyme (pinch to wake it up)
- 1 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a small bowl, beat the egg or prepare the flax egg and let it rest 5–10 minutes.
- In a large bowl, combine ground chicken, shredded apple, almond flour, egg, and all seasonings. Mix gently until just combined.
- Form into meatballs and place on baking sheet.
- Bake for 25–28 minutes, or until internal temperature reaches 165°F. For extra browning, broil the last 2–3 minutes.
