🍎 Apple Pie Chia Pudding

Makes 3 servings | Gluten-free, dairy-free, hormone-supportive

Ingredients:
  • 8 tbsp chia seeds
  • 2 cups milk of choice (I used coconut milk)
  • 2 tbsp chai spice blend (see below)
  • Optional: a few scoops of protein powder (I used banana cinnamon)
Chai Spice Blend (makes extra to save):
  • 3 tbsp Ceylon cinnamon
  • 1 tbsp ground ginger
  • 1 tbsp cardamom
  • ½ tbsp nutmeg
  • ½ tbsp allspice
  • ½ tbsp cloves
Topping:
  • 3 apples, chopped
  • Coconut oil
  • Cinnamon, vanilla, and pinch of salt
  • Optional: chopped pecans
Instructions:
  1. Whisk together milk, chai spice blend, and protein powder if using.
  2. Add chia seeds and whisk again until well combined.
  3. Cover and refrigerate for at least 3 hours or overnight until thickened.
  4. Meanwhile, sauté chopped apples in coconut oil with cinnamon, vanilla, and a pinch of salt until soft and caramelized.
  5. Spoon chia pudding into jars or bowls, top with warm apples and chopped pecans if desired.

Storage: Keeps in the fridge for up to 4 days. Best enjoyed during the luteal phase for hormone support, but delicious any time of month!
